The Business

The precinct has become one of the city’s favourite meeting places and is home to an award-winning collection of restaurants and bars, including Beer Corner, Wine Merchant, Long Chim, Shop 1875, Wildflower, Cape Arid Rooms, POST Osteria & Bar and more.

The Wine Bar Manager is responsible for overseeing Wine Merchant, ensuring smooth and efficient operations. This role will provide leadership, manage finances, and maintain workplace health and safety standards to achieve operational excellence and deliver exceptional customer experiences.

Key Responsibilities

  • Operational Oversight: Take full responsibility for the daily operations of the venue, ensuring that all activities align with standard operating procedures (SOPs), quality standards, and guest satisfaction goals. Work closely with the Sommelier and Director of Wine to maintain smooth operational flow.
  • Staff Management: Recruit, train, and develop a dedicated and high-performing team of managers and staff. Foster a positive work environment that encourages collaboration, motivation, and professional growth. Provide ongoing coaching and feedback to ensure continuous team development.
  • Financial Management: Oversee the venue’s financial performance by analysing revenue, expenses, and budget reports. Develop and implement strategies to improve profitability, control costs, and ensure efficient inventory management.
  • Quality Assurance: Maintain and enforce quality control standards, particularly regarding food safety and sanitation protocols. Ensure compliance with local health regulations and internal company standards, striving to deliver a consistently high-quality guest experience.
  • Guest Experience: Actively seek ways to enhance the guest experience by gathering feedback, addressing concerns, and implementing solutions that improve overall satisfaction. Maintain a guest-focused approach and ensure all interactions exceed expectations.
  • Performance Metrics & Reporting: Develop and track key performance data, generate regular reports, and analyse trends to assess venue performance. Identify areas for improvement and take the necessary actions to increase operational efficiency and service quality.
  • Strategic Planning: Work with senior management to create and execute long-term business strategies, including expansion plans, market entries, and operational improvements, aligning with the venue’s goals and vision.
  • Compliance & Safety: Ensure strict compliance with all relevant workplace health and safety laws, regulations, and company policies. Conduct regular safety inspections, implement corrective actions where needed, and provide staff training to prevent accidents and ensure a safe work environment.

Core Competencies

  • Leadership: Strong leadership skills with the ability to motivate and guide a team towards achieving common objectives. Excellent communication and interpersonal skills to foster a collaborative work environment and resolve conflicts as they arise.
  • Financial Acumen: Solid understanding of financial management, including budgeting, cost analysis, and pricing strategies. Ability to interpret financial data and implement measures to improve profitability and operational efficiency.
  • Workplace Health & Safety: A thorough understanding of Australian Workplace Health and Safety legislation. Proactively manage risk assessments, safety protocols, and provide training to ensure a culture of safety and compliance.

Skills and Experience

  • Previous experience in a similar role with a strong passion for the industry
  • WSET (preferred)
